Extracted from red algae, agar agar is a 100% natural polysaccharide known for its very powerful gelling power. It makes it possible to produce compact and solid gels. In pastry, it is an ideal substitute for animal gelatin, and can be used to make puddings, jellies, creams, jams, Bavarians.... It is particularly renowned for its dietary properties


FunCakes agar-agar powder
is a vegetable binder and a versatile product. It can be used instead of animal gelatin. It does not contain any animal products and is therefore perfectly suited for a vegetarian and vegan diet.


PREPARATION METHODIf you replace gelatin with agar-agar, you will need to adjust your recipe: while gelatin is not cooked, agar-agar must be boiled for at least 30 seconds in a liquid and then cooled to gel. Its gelation power is 8 times higher than that of gelatin. 1g agar = 8g gelatin. Classically it takes 2gr of agar agar for ½ litre of liquid. Agar-agar hardens at room temperature. Always keep your preparations in the refrigerator.


This product is colourless and tasteless.
