Dosage for the hot pastry cream:
- Preparation for hot pastry cream Ancel: 80 g / liter of milk + 200 to 250 g of sugar, + 1 or 2 eggs in option.
Dosage for the Parisian flan:
- Preparation for hot pastry cream: 100 g / litre of milk + 150 to 200 g of sugar, + 1 or 2 eggs as an option.
Instructions for using the hot pastry cream : Dilute your preparation for pastry cream with 1/4 of cold milk then add 1 egg or 2 yolks. Whisk to a smooth mixture and then boil the remaining milk with the sugar. Remove from heat, pour in the mixture while stirring. Bring to a rolling boil without stopping to stir, then remove from heat and let cool.
