This powdered preparation from Ancel allows you to lighten the texture of doughs and in particular that of biscuits. It will guarantee a good rise and a better development of the doughs during cooking.
You can use it for your savoy biscuits, spoon biscuits, cakes, sponge cakes, madeleines..
Recipe for sponge cake: 170 g of preparation for biscuits + 330 g of flour + 500 g of sugar + 16 eggs.
Replace 1/3 of the flour in your traditional recipe with ancel biscuit mix. Implement your recipe (removing the leavening substance for the madeleines and cakes). Fill the moulds by reducing your usual quantity of dough by 1/3.
The texture of your biscuits will be lighter and softer. You will then obtain a soft and tasty sponge cake.
