Ammonium bicarbonate is also known as "English salt", "baker's ammonia" and "Hartshorn salt"

It comes in the form of a white powder. This food additive dissolves in water.

The generally recommended dosage is 2g to 10g per kilo of flour.

This bicarbonate should not be used for cakes or pies as the gases released would not escape properly.
