Reusable professional white structure that allows you to securely space the last 2 round tiers of your pièce montée 10cm apart to create the famous visual effect of levitation... As if the last tier of your cake were floating in mid-air!

The bottom round tray measures 15cm in diameter and the top is 10cm. The foot connecting the 2 trays is located on the curved side. The height of the gap between the 2 trays is 15cm.

Description

Specially designed for the Cake Designthe laser-cut white structure, approved for food contact, is highly resistant. Reusable, it will be your best ally to fascinate your customers!

This structure offers you rock-solid stability to easily support the weight of the top tier of your 10cm-diameter pièce montée, which can weigh up to 1.3kg without sagging. Its finishes, namely its welds and the polishing of the coating, are particularly well worked and will enable you to cover the bottom tray with sugar paste without defect.

Tip for use: There are several ways to integrate this structure into your cake, and here's one of them:

  1. If your base to support the structure is a false tier (dummies) of 15cm, place your structure on top, securing it with royal icing. Cover the whole (dummies and bottom tray) with sugar paste.
  2. If your base is a real 15cm cake, insert 4 pillars dowel then ganache it. The ganache also acts as glue for the structure. Cover with sugar paste.
  3. For the top tier, if you don't want the underside of the small stainless steel tray to be visible, cover it with thin sugar paste on both sides of the tray. Glue the last top tier (10cm diameter) with royal icing and cover with sugar paste*.
  4. And to conceal the foot that will create the visual effect of levitation, you can cover it with sugar paste and surround it with flowers or other objects in keeping with the theme of your cake.

*There are several ways of covering the whole thing with sugar paste ("American style" or the "French style") but, if your floor is edible, it's important to consider how your host will need to proceed to access the cake to serve it to guests .

Good to know:

  • Like all food-contact stainless steel, this material cannot rust, even when in permanent contact with moist materials. Nevertheless, we strongly advise you to store the structure in a dry place, always wrapping it in plastic film or another airtight bag. In fact, with constant contact with the air and over time, the surface can become covered with a dull, dark layer, leading you to think that it's rusting... which is of course not possible with this material. In this case, if it bothers you visually, all you have to do is rub it off.
  • The base of the structure is engraved with the Logos of PLANETE GATEAU and MADL Créations to symbolize the partnership. This tray is, in any case, intended to be covered with sugar paste
  • Can be cleaned with soap and water, and is dishwasher-safe.
