Dosage on a flavour/alcohol basis: 200 g Alaska-express Neutral Bavarian Cream + 300 g water at 25-30°C + 1000 g sweetened whipped cream up to 150g/litre depending on use.
Dosage on a fruit puree basis: 300 g Alaska-express Neutral Bavarian cream + 1000 g sweetened whipped cream up to 150 g/litre depending on use + 800 g fruit puree.
1 kg of preparation used according to the above recipe allows you to make either: 14 L of Bavarian mousse or 120 portions of 60 g or 2 frames of 40 x 60 x 3,5 cm.
